Mara’s Pasta Giveaway

  I like pasta. I mean really good pasta. Mara’s Pasta is really good pasta. Mara’s makes artisan pastas in several varieties. I was able to sample three of these. Mara’s sent me a gift pack containing Penne, Fettuccine and Spaghetti.  The box itself is impressive. Has label pictured at left on a sturdy gift box with handle. If you are looking for a great gift for a foodie in your life, look no further. Mara’s Gift Boxes are sure to please.  Hubby wanted to try the Fettuccine with homemade roasted mushroom and tomato sauce with meatballs, so that’s what I did. Turned out awesome. The pasta cooked perfectly. I highly recommend Mara’s pasta. It will make your favorite recipe even better

Fettucine with Roasted Mushroom and Tomato Sauce With Meatballs

4 cups Fresh Cherry Tomatoes washed

2 1/2 cups assorted fresh mushrooms cleaned and rough cut

Olive oil

3/4 cup Chopped Celery

1 cup Chopped Sweet Onion

1 can Chicken Broth

3 cloves chopped garlic

Bay Leaf

Salt and Pepper to taste

Meatballs (However many you want) (cooked according to package directions)

1/2 pound Mara’s Fettucine (cooked according to package directions)

Preheat Oven to 450 degrees. Put mushrooms on one foil lined cookie sheet Drizzle generously with olive oil, top with fresh ground black pepper. Put tomatoes on a separate foil lined cookie sheet Drizzle generously with olive oil, top with salt and fresh ground black pepper. Bake at 450 til roasted about 15 minutes for mushrooms and 20 for tomatoes. (Ovens vary so keep an eye on em) While these are roasting, saute onions garlic and celery in 1/4 cup olive oil in stock pot. When all of this is ready put everything but roasted mushrooms in blender and blend til smooth. Then pour back into pot add mushrooms, chicken broth and bay leaf. Simmer til meatballs and Mara’s Fettuccine are ready. If you want it a bit creamier you can add a touch of goat cheese to your sauce.Absolutely delicious.
