We have been having some more fun with the WonderMill. This time we decided to make cornbread. My daughter suggested popcorn for the recipe. I looked in the WonderMill manual and sure enough I could grind popcorn so I said why not.
First you need to use your WonderMill to grind up some popcorn kernels. This will make a beautiful cornmeal You will need 2 cups for this recipe. Look what a beautiful job the WonderMill did making the popcorn meal. I love this machine.
1/3 cup bacon grease
Heat up slowly in bottom of cast iron skillet in oven
2 cups popcorn meal
3/4 tsp baking soda
3/4 tsp baking powder
1 tsp salt
couple grinds of fresh ground pepper
Combine all these dry ingredients together.
1 1/2 cups almond milk + 2 Tbs jalapeno juice
1 egg wisked
5 Tbs margarine (melted)
diced jalapeno to taste
Blend wet ingredients together blend wet mix into dry mix just enough to combine. Do not over mix. Carefully pour batter into cast ion skillet with bacon grease that has been preheated to 450 degrees. Bake for about 20 minutes. let rest for a few minutes before serving. I love this with butter.
