I really enjoyed trying out the recipes in Einkorn the Cookbook. I have a weakness for cookies so naturally the first recipe I tried was for chocolate chip cookies. These cookies are beyond a doubt the best chocolate chip cookies I have eaten in years. Possibly in my entire life. There is something truly different about Einkorn. The best way I can describe it is having only eaten store bought tomatoes your whole life. Then one day getting a bite of a perfectly ripened organically grown tomato that you just picked right off of the vine. There is really no comparison. The flavor of Einkorn has that same incomparable taste. I am convinced that Einkorn made the difference in the flavor of those cookies. It’s no wonder. Einkorn is the original wheat. It is the wheat of the ancients. Wheat from before man started crossing it with grasses etc to make the historical agricultural journey to today’s wheat.
Next Hubby wanted to try some home made read so I whipped up a batch of “Two Hour Bread” I followed the directions exactly. Being careful not to over mix the dough. The recipe was unbelievably simple to do. Most of the time spent on the recipe was in the rising of the dough and the baking of the bread. The hardest part was waiting for the heavenly smelling bread to cool so we could eat it. Hubby and I are convinced . I will be purchasing Einkorn flour from now on.
