WonderMill Grain Mill Giveaway (ARV $ 270)

I was really blessed to be able to try out the WonderMill Electric Grain Mill. This is an absolutely amazing piece of machinery. I love that the WonderMill Electric Grain Mill allows you to create so many varieties of flour at home. Hubby and I tried out the mill and were very pleased with the results. We made rice flour first. I can’t explain to y’all how user friendly and simple the WonderMill Electric Grain Mill is to use. Plug it in, turn it on, pour your grain, rice or whatever you are milling in the grinding side, wait til it is finished milling, (You can tell it’s done from the change in sound) turn off the machine and presto you have the freshly ground flour of your choosing. How easy is that. The container that the flour falls into while grinding can also be used as a canister for flour storage. Even comes with an airtight lid.

I looked online for recipes for rice flour and found many of them to be for batters such as tempura. This is great , but you know I like getting creative. We decided on  Rice Flour Pancakes. I tried a recipe that I found on the web and did not like the results. The flour we made came out like baby powder. We had milled the rice on the pastry flour setting and it came out beautifully smooth I could not see why the pancakes were so dense in texture.

Hubby decided we just needed a new recipe. So we played around a bit and since making more rice flour was so simple we experimented til we came out with a recipe I am proud to share with y’all.
I present to you…

Vanilla Rice Flour Pancakes

Ingredients
1 egg beaten
1 TBS canola Oil
1 tsp vanilla
1/2 cup vanilla almond milk

Blend first four ingredients together

1 cup rice flour made in your WonderMill
1/2 tsp salt
1/4 tsp baking powder

Whisk together next 3 ingredients
Blend wet and dry ingredients together. Make sure to get rid of any lumps. Batter is a bit thicker that normal pancake batter.
Heat griddle over medium high heat. Add bit of butter. let it melt. Drop batter by spoonful onto melted butter. Cook until edges are done. Flip and coo other side. Serve warm with your favorite syrup.
