The folks over at The Spice Lab sent over one of their collections of salts for us to check out. We got the Gourmet Collection #2 with four tubes. This little culinary delight included one test tube of each: Himalayan Crystal Pink- No. 40, Hickory Smoked – No. 8, Cyprus White Flake – No. 3, and Molakai Black Hawaiian – No. 13 in a lovely wooden holder and a handy spoon to remove salt from the tubes. I know you are probably thinking salt is salt right? I am here to tell you there is such a difference. Each of these salts has truly unique flavor and texture. Let me tell ya a bit about each one.
Pink Himalayan has been a long time favorite of mine in the sea salt world. Compliments so many dishes perfectly. The Spice Lab’s version has excellent uniformity in texture while the multiple colors show how natural it really is.
The Himalayan salt beds formed in the Jurassic era when large seas dried out. The massive salt flats where covered up through the ages, they became locked deep in the earth. Local weather, erosion and water leached minerals into the berried salt, imparting minerals color and taste.
This gourmet salt is pure, hand-mined deep inside the pristine Himalayan mountains. The high mineral content of the Himalayan salt crystals range in color from sheer white to varying shades of pink to deep reds. The darker the color the more minerals are in the salt.

The smoky smell is like wow when you just pop the top off the test tube. A small taste in the hand shows of the wonderful flavor. I also love the beauty of it as a finisher. This flavor will rock anything you want to grill. Superb.
Finishing & Cooking – Sea Salt, All Natural
Hickory (Durango) Smoked Salt is created when delicate Pacific sea salt flakes are naturally smoked over premium Hickory hard wood. The resulting smoke flavor is full and clean without the bitterness. Hickory smoke is synonymous with southern cooking. Hickory Smoked Salt works magic with ribs, burgers, red meat, turkey, and chicken.
If you are a BBQ fan try the Hickory Smoked salt on EVERYTHING. When you use Hickory salt on the stove top, it is like cooking outside on the BBQ.
I love this one. The large flakes make a bold statement when used as a finisher on fresh vegetables or homemade caramels.
Finishing, Table & Cooking – Sea Salt, All Natural
The Cyprus salt flakes are known for their large pyramid shaped crystals. Light and fluffy with the mild taste characteristic of Mediterranean salts. Popular for cooking and baking, this flake salt is also commonly used as a garnish for fish and vegetable dishes.
The super large flakes of the Cypress salts are great for Salads; they add contrast to your plate. I use Cyprus Black / White Flake on a Caprese Salad. Use the Cyprus Black on the mozzarella cheese and Cyprus White on the tomatoes and basil, it looks great.
This was actually the first time I had sampled lava salt. I am quite impressed. The flavor is bold and I love it. Color is a lovely black and is actually beneficial to your health if used without excess.
With stunning black color and silky texture, reminiscent of Hawaii’s black lava sand beaches, this salt is enriched with activated charcoal. This compliments the natural salt flavor and adds numerous health benefits to the salt.
Black Lava salt should not be used during the actual cooking process as it will dissolve and the added black elements will simply settle to the bottom as a residue. Instead, use it as a finishing salt, where its bold taste can be savored and fully enjoyed. It goes well with all types of seafood, pork and vegetables.
